Basic Roll Cake
Ingredients
• 4 eggs, separated
• 100 g sugar (about ½ cup)
• 1 tsp vanilla extract
• 80 g all-purpose flour (about ⅔ cup)
• 1 tbsp cornstarch (optional)
• ½ tsp baking powder
• 2 tbsp milk
• Powdered sugar, for dusting
• Filling of choice (whipped cream, jam, Nutella, custard, etc.)
Instructions
1. Preheat the oven to 180°C (350°F). Line a 10×15-inch baking pan with parchment paper.
2. In a bowl, beat the egg whites until foamy.
3. Gradually add half of the sugar and beat until stiff peaks form.
4. In a separate bowl, whisk the egg yolks with the remaining sugar and vanilla extract until pale and creamy.
5. Sift together the flour, cornstarch, and baking powder.
6. Add the dry ingredients to the yolk mixture, alternating with the milk, and mix until combined.
7. Gently fold the whipped egg whites into the batter in batches.
8. Spread the batter evenly into the prepared pan.
9. Bake for 10–12 minutes or until lightly golden and springy to the touch.
10. While still warm, turn the cake onto a clean kitchen towel dusted with powdered sugar.
11. Remove the parchment paper.
12. Roll the cake up with the towel from the short side and let it cool completely.
13. Unroll the cooled cake and spread your desired filling evenly over the surface.
14. Roll the cake back up tightly.
15. Dust with powdered sugar before serving if desired.
